Chinese Dishes - Fried shrimps in Japanese eel sauce

Ingredient

  • 8 medium shrimps

  • 1 tsp diced red chili

  • 1 tsp shredded shallot

  • 1 tsp diced ginger

  • 1 tsp grated garlic

  • 2 tsps caltrop starch

  • 2 tbsps Japanese eel sauce

  • 1 tbsp Japanses sake liquor

Seasoning

Method

  1. Trim the legs off the shrimps. Make a cut along the back of each shrimp with a knife. Devein. Sprinkle caltrop starch on the shrimps.

  2. Heat 1 1/2 tbsps of oil in a wok. Fry shrimps until 80% done.

  3. Add diced red chili, shredded shallot, diced ginger and grated garlic. Stir fry briefly. Then sprinkle wine

  4. Pour in Japanese eel sauce and seasoning. Cook for a while until the sauce reduces. Serve.
