Chinese Dishes - Soft-shelled Turte's Shell with Green Chinese Spinach

Ingredient

  • Stock 6 taels

  • Soft-shelled turtle's shell 5 taels

  • Green Chinese spinach 1/2 catty

Method

  1. Soak soft-shrelled turtle shell. (Keep changing water while soaking.)

  2. Blanch green Chinese spinach in salty water with oil. Drain and place on a serving plate.

  3. Heat stock and cook soft-shelled turtle shell until done. Add seasonings and thicken the sauce with corn starch solution.

  4. Pour over the bed of green Chinese spinach.
