Chi中 Eng英 Ind印 Soup - Lotus Root and Beef Soup
Ingredient - 900g lotus root
- 450g shin of beef
- 8 water chestnuts
- 3 slices ginger
- 1/3 piece dried tangerine peel
- salt a pinch

Method- Wash lotus root. Cut into pieces. Peel.
- Peel water chestnuts and wash. Soak dried tangerine peel in water until tender and remove pith.
- Blanch shin of beef. Rinse and drain.
- Bring suitable amount of water to the boil with dried tangerine peel. Put in all ingredients and boil for 10 minutes. Turn to low heat and cook for 3 hours until beef is tender. Season with salt.
