Chi中 Eng英 Ind印 Soup - Guinea Fowl with Lotus Seed and Fox Nut Soup
Ingredient - 1 guinea fowl
- 255g shin of pork
- 38g fox nuts
- 38g lotus seeds
- 19g Huai Shan
- 1 tbsp dried longan
- 2 slices ginger
- salt

Method- Cut guinea fowl. Rub beak and bottom with crude salt. Wash. Blanch guinea fowl and shin of pork. Rinse.
- Wash lotus seeds, fox nuts, Huai Shan and longan.
- Bring suitable amount of water to the boil. Put in all ingredients. Boil for 10 minutes. Turn to low heat and cook for 3 hours. Season with salt. Serve.
