Chi中 Eng英 Chinese Dishes - Braised E-fu noodles with cheese, pumpkin and seafood
Ingredient - 2 E-fu noodles
- 100g shelled shrimps & scallops & shelled clams & fish fillet
- 2 mock crab sticks (diced)
- 1/2 onion (diced)
- sliced of button mushrooms, green peas
- pinch pepper
- 1 tsp grated garlic
- 1/2 cup grated cheddar cheese
- 1/2 tsp salt

Sauce- 200g pumpkin
- 3 tbsps butter
- 4 tbsps flour
- 1 1/2 cups water
Method- Seed and peel the pumpkin and cut it into pieces. Steam it over boiling water for 20 minutes. Mash pumpkin while it is still hot.
- Melt butter in a wok. Stir in flour and add water gradually. Add evaporated milk. Stir and cook until the mashed pumpkin becomes pumpkin sauce. Set aside.
- Slice the fish fillet. Slice the scallops thinly. Scald with shelled shrimps, clams and sliced fish together. Marinate with salt and pepper.
- Cook E-fu noodles in water until done. Drain and put on a plate.
- Heat some oil in wok. Add all the ingredients and sauce. Stir fry.
- Pour the sauce onto noodles. Bake it into a preheated oven of 180℃ for 20 minutes until golden. Serve.
