Chi中 Eng英 Chinese Dishes - Fried shrimps in Japanese eel sauce
Ingredient - 8 medium shrimps
- 1 tsp diced red chili
- 1 tsp shredded shallot
- 1 tsp diced ginger
- 1 tsp grated garlic
- 2 tsps caltrop starch
- 2 tbsps Japanese eel sauce
- 1 tbsp Japanses sake liquor

Seasoning- 1/2 tsp salt
- 1 tsp sugar
- pepper as desired
- 3 tbsps water
Method- Trim the legs off the shrimps. Make a cut along the back of each shrimp with a knife. Devein. Sprinkle caltrop starch on the shrimps.
- Heat 1 1/2 tbsps of oil in a wok. Fry shrimps until 80% done.
- Add diced red chili, shredded shallot, diced ginger and grated garlic. Stir fry briefly. Then sprinkle wine
- Pour in Japanese eel sauce and seasoning. Cook for a while until the sauce reduces. Serve.
