Chi中 Eng英 Chinese Dishes - Dried Black Moss with Oysters in Casserole
Ingredient - 20g dried black mushrooms
- 8g dried black moss
- 150g dried oysters
- 150g lettuces
- some carrot slices and ginger slices
- 1 teaspoon mashed garlic
- 4 shallots

Seasoning- Marinade:
- 1/4 teaspoon each of ginger juice and wine
- 1/2 teaspoon each of salt and sugar
- a dash each of oil and pepper powder
- 2 teaspoons oyster sauce
Sauce- 1/2 teaspoon each of salt and sugar
- 1 teaspoon cornstarch
- 5 tablespoons water
Method- Clean the dried oysters, macerate in hot water above 1 hour, scoop out, mix well with the marinade.
- Stalk and macerate the black mushrooms, mix well with some oil, sugar and cornstarch.
- Rub the dried black moss with some oil, macerate in water for a while, clean; clean the lettuces.
- Heating 3 tablespoons of oil, Saute the garlic with shallots, black mushrooms, dump in the dried oysters and stir-fry for a while, pour in water, simmer till tender, pad with lettuces, stir in carrot slices and cornstarch solution, bring to the boil to serve.
