Chi中 Eng英 Chinese Dishes - Crispy Eel in Bean Sauce
Ingredient - Eel (sliced) 6 taels
- Bread crumbs 2 taels
- Egg yolks 2

Seasoning- Corn starch 1 tbsp
- Sesame oil 1 tsp
- Chicken powder 1/4 tsp
- Pepper 1/4 tsp
- Salt 1/4 tsp
- Bean sauce as desired
Sauce- Dipping sauce:
- Bean sauce 2 tsp
- Soy (Tou Chou) 1 tsp
- Crushed garlic 1/2 tsp
- Chopped shallot 1/2 tsp
- Sugar 1/4 tsp
- Thickening:
- Corn starch 1/2 tsp
Method- Crispy eel:
- Beat egg yolk and seasonings.
- Dip eel in egg wash and coat with bread crumbs.
- Deep fry in hot-and-warm oil until golden brown. Serve with dipping sauce.
- Dipping sauce:
- Saute garlic, shallot and bean sauce. Add sugar, soy and water. Thicken with corn starch solution, stir well.
