Chinese Dishes - Crispy Eel in Bean Sauce

Ingredient

  • Eel (sliced) 6 taels

  • Bread crumbs 2 taels

  • Egg yolks 2

Method

  1. Crispy eel:

  2. Beat egg yolk and seasonings.

  3. Dip eel in egg wash and coat with bread crumbs.

  4. Deep fry in hot-and-warm oil until golden brown. Serve with dipping sauce.

  5. Dipping sauce:

  6. Saute garlic, shallot and bean sauce. Add sugar, soy and water. Thicken with corn starch solution, stir well.
