Chi中 Eng英 Ind印 Chinese Dishes - Fried Spare Ribs With Sour Plum
Ingredient - 400g spare ribs
- 2 sour plum
- 1 stalk spring onion (cut finely)
- 1/2 red bell pepper (cut into thin strips)

Seasoning- 1 tsp Shao Xing wine
- 1 tsp light soy sauce
- 1 tsp red vinegar
- 20g rock sugar
- 1/4 tsp salt
Sauce- Marinade:
- 1 tbsp light soy sauce
- 1 tsp sugar
- 2 tsp rice wine
Method- Mash sour plum. Mix with marinade ingredients and spare ribs. Leave it for 1 hour.
- Deep fry spare ribs in boiling hot oil till medium rare (80% done). Dish up.
- Heat up 1 tbsp oil. Add seasoning and cook til rock sugar melts. Add spare ribs and stir till sauce thickens. Add spring onion and red bell pepper strips. Serve.
