Chi中 Eng英 Ind印 Chinese Dishes - Gray Mullet Cold Dish Chao Zhou Style
Ingredient - 1 gray mullet
- 2 celery stems (chopped finely)
- 2 stalks coriander
- 2 tbsp Pu Ning fermented bean paste

Seasoning- Marinade:
- 1 tsp salt
- 1 tsp ginger juice
- Pepper to taste
Method- Remove scales of fish and gut it. Rinse. Wipe dry. Coat fish surface with marinade ingredients. Leave it for20 minutes. Set aside.
- Place fish on plate. Sprinkle chopped celery stems on fish and in fish stomach. Steam over water for 8 minutes. Remove from wok and let it cool. Place coriander on fish. Serve with Pu Ning bean paste as dip.
