Chi中 Eng英 Phi菲 Ind印 Chinese Dishes - Tamarind Ribs with Pickles
Ingredient - 24 taels spare rib
- 2 tsp fish sauce
- 1/2 tsp salt
- some tamarind
- some palm sugar
- some shallot

Seasoning- 2 tsp salt
- 2 tsp soy sauce
- 1 tbsp sugar
- 2 tsp rose wine
- 1 tsp dark soy sauce
Method- Soak the tamarind in hot water to make pickled water.
- Rinse the spare ribs and absorb the water and marinate with marinate with marinade for 1 hour.
- Heat the wok to sautee shallot. Then, add in spare ribs.
- Then, pour in tamarinded water. Then turn to high heat to braise the spare ribs for 5 minutes. Then, add in palm sugar and seasonings. Then, turn to medium heat to braise for another 20 minutes.
