Chi中 Eng英 Ind印 Soup - Pig's Liver Custard Soup
Ingredient - 225g pig's liver
- 5 egg whites
- 1 egg yolk
- 1/2 tbsp minced ham
- 3 cups stock
- Chinese parsley

Seasoning- 1/2 tsp salt
- 2 tsps wine
- sesame oil as desired
- pepper as desired
- 1 cup stock
Method- Wash, slice and then mince pig's liver. Put through strainer and discard residue. Mix it with egg whites, egg yolk and seasoning. Pour mixture into a greased bowl. Steam for 10 minutes.
- Boil stock and pour into bowl. Add in whole piece of steamed liver custard. Scatter with ham and Chinese parsley. Serve.
