Soup - Pig's Liver Custard Soup

Ingredient

  • 225g pig's liver

  • 5 egg whites

  • 1 egg yolk

  • 1/2 tbsp minced ham

  • 3 cups stock

  • Chinese parsley

Seasoning

Method

  1. Wash, slice and then mince pig's liver. Put through strainer and discard residue. Mix it with egg whites, egg yolk and seasoning. Pour mixture into a greased bowl. Steam for 10 minutes.

  2. Boil stock and pour into bowl. Add in whole piece of steamed liver custard. Scatter with ham and Chinese parsley. Serve.
