Chi中 Eng英 Ind印 Soup - Chayote with Lean Pork Soup
Ingredient - 3 chayote
- 12 taels lean pork (480g)
- 4 candied dates
- 4 dried scallops
- 8 bowls water

Method- Wash chayote and remove seed. Cut into pieces.
- Wash lean pork and scald with boiling water. Rinse with water. Set aside.
- Wash and soak dried scallops till soft. Wash dates.
- Boil water. Add chayote pieces, pork, dried scallops and dates. Bring it to boil over high heat. Reduce to low heat and simmer for 2 hours. Add salt. Serve.
