Chi中 Eng英 Chinese Dishes - Braised lobster in stock
Ingredient - 1 lobster (about 600g)
- 2 tbsps diced ginger
- 2 tsps grated garlic
- 2 cloves shallots
- 1/2 cup stock
- 1 tbsp caltrop starch
- 1 tbsp Shaoxing wine
- 1 fried dried noodles
- Spring onion (sectioned)

Seasoning- 2 tsps light soy sauce
- 1/4 tsp salt
- 1/2 tsp sugar
- some pepper and sesame oil
Method- Gut and dress the lobster. Wash well and cut it into pieces. Sprinkle caltrop starch. Cut the shallots into fine shreds.
- Cook the noodles in water for a moment. Drain. Stir fry with a little oil briefly. Put it onto a serving plate
- Deep fry the lobster pieces in warm oil. Drain and set aside.
- Heat 1 tbsp of oil. Stir fry ginger, garlic and shallot until fragrant. Put in fried lobster pieces. Stir fry. Sprinkle wine.
- Pour in stock and seasoning. Cover the lid and cook for 5 minutes until the sauce reduces. Add spring onion and stir well. Pour the lobster and sauce on the bed of fried noodles. Serve.
