Chi中 Eng英 Chinese Dishes - Roasted Chicken in Bean Sauce

Seasoning- Marinade:
- Water 1.5ml
- Soy 300g
- Ginger 6 chiens
- Spring onion 2 stalks
- Celery 1 tsp
- Bean sauce 1 tsp
- Salt a pinch
Sauce- Glazing:
- Vinegar 1 tbsp
- Maltose a little
Method- Rinse chicken and marinate for an hour. (enough to cover the whole chicken)
- Put all the marinade ingredients back in the tummy of the chicken. Seal with a skewer.
- Mix the maltose with vinegar well as glazing. Glaze the chicken.
- Preheat the oven to 200C. Bake the chicken for 30 minutes until golden brown. Pour boiling oil on the skin side of the chicken until crispy.
- Chop the chicken in bite-size pieces. Save the gravy including marinade ingredients. Reheat the gravy with sugar in the microwave oven. Sift the gravy and serve with chicken as dipping sauce.
